Hensol Castle Whisky Is Coming…

‘’Making great Whisky truly is the pinnacle of a distillers quest’’

Here at Hensol Castle Distillery, we lay our first filled barrel of single malt whisky to rest for 3 years and 1 day.  It’s been a creation of masterminds, a collaboration between a team of professional distillers with a shared experience of 15 years, along with Wales’ most intuitive, successful and modernised brewery team, Team Tiny Rebel.

Our Master Distiller & his team have being working tirelessly with Head Brewer Mark Gammons & his team from Tiny Rebel, to create the perfect Mash for our single malt Whisky.

In short, our Master Distiller has created a beer wash recipe with the consultancy of team Tiny Rebel, that has now been expertly distilled at Hensol Castle Distillery. 

Every month going forward, Tiny Rebel will supply 5000 litres of beer wash to Hensol Castle at 10.3% ABV, where our distillery team will begin a first 400L distillation of low wines at 26% ABV.  A further spirit distillation takes place, reaching low 80s % ABV.

 

 

The distiller’s will make several cuts, and re-distill some of these cuts, to perfect the liquid they choose to rest in their ex first fill bourbon 200L casks.  The aim is to rest 2.5 barrels per month at 63.5% ABV for the next few years, whilst we upscale our distillery production 10-fold. 

To turn this 5000L into approximately 500L of Single Malt Whisky, Hensol will be doing 15 daily distillations per month.

‘’Single Malt Whisky is truly selling out across the globe and the Irish & Scots simply can’t make enough of it.  We are quite frankly 500 years behind Scotland, with only the likes of Penderyn dominating the Welsh Whisky scene for the last 20 years. More recently you have the likes of Aberfalls, and some smaller distilleries in Wales making exquisite small batches, like the guys at DaMhile, which is actually one of my personal favourites.

Welsh Whisky is sought after, and now is the time to strike and plan ahead.  We have huge visions for our whisky, and an array of possibilities for the coming years.  With the help and support from the Leeke family, along with working with a like-minded team of people at Hensol, we have extensive plans to put Welsh Whisky on the map.  It’s an exciting time to be alive, and our aim is to release our 3yr Whisky for retail from our distillery and online shop only initially with bigger goals to lay down 800 barrels per year within 5 years.’’
