We are delighted to introduce the newest member of Hensol Castle Distillery, Jake Wilson our Master Distiller. Jake's gin story starts with his first sip, neat, at the age of 10 (without his parent's knowledge, of course). However, It took a further 10 years and starting his own cocktail bar for him to realise his true love of gin. After this, he decided on a path to marry his love of alcohol and flavours with a passion for engineering, leading him to a career in distilling. Having distilled award-winning spirits and liqueurs he now joins the Hensol Castle Distillery team as our Master Distiller.

What attracted you to work at Hensol Castle Distillery?

I was instantly attracted to Hensol Castle Distillery because of how ambitious the project is. It was clear straight away how passionate everyone involved is about the distillery and what we can achieve.

What is your experience in the gin industry?

My experience within the industry started behind the bar at events before I worked in a couple of pubs and cocktail bars. I then started my own pop-up cocktail bar for events, weddings etc. I knew distilling is where I wanted to be and so I set about trying to find a job where I could learn. I was lucky enough to become an assistant to an incredibly talented master distiller. I worked my way up within that distillery before moving to a smaller craft distillery. There I grew the distillery alongside the owners, producing high-quality craft spirits and liqueurs.

Where do you see gin going in the next 5 years?

People keep expecting Gin to reach its peak and start to tail off, but I don’t think that is quite in sight yet. The quality and creativeness within the industry has kept Gin moving forward and I expect it to continue to do so

What is your perfect serve?

My perfect serve is a simple G&T. Plenty of ice, plenty of gin and a splash of tonic. However, with the nights getting colder you can’t beat Gin Hot Toddy to keep you warm!

- 1 1/2 ounces gin

- 3/4 ounce lemon juice (fresh)

- 2 ounces hot water

- 1 teaspoon sugar

- Garnish: cinnamon stick

Your perfect weekend consists of….?

My perfect weekend would be an adventurous day out Saturday, ending with dinner and a few drinks. Then a lazy morning and a big family Sunday lunch at my parents.

Anywhere that does good tapas!
